Chocolate. Peanut. Butter. Well it’s technically three, but who’s counting.
I don’t think I have ever met someone who didn’t like the classic chocolate & peanut butter combination.
These cookies are super soft, a little chewy, and have a little cake-y brownie like texture going on. These are made with margarine instead of butter to give them softness and dark brown sugar for depth. After baking, these cookies need to cool on the baking sheet for a good five to ten minutes so they set up.
Between two of those super awesome chocolate cookies, you guessed it, a peanut butter cream filling.
For a little something more I rolled the cookies edges in chopped unsalted peanuts. You could be a little crazy and roll them in chopped reese’s cups, reese’s pieces, or even mini chocolate chips!
Soft and Chewy Chocolate Cookie Recipe
2 sticks softened margarine
1 1/2 cups dark brown sugar
1 tsp vanilla extract
1 tsp salt
1 1/2 cups flour
3/4 cup cocoa powder
1 tbsp baking powder
Preheat oven to 350 degrees. Prepare a baking sheet with a Silpat.
With a mixer, beat margarine and dark brown sugar until well blended. Add vanilla and salt, and beat until light and fluffy. Add eggs and mix until well combined, scraping down the bowl to make sure it’s all blended.
In a separate bowl combine flour, cocoa powder and baking powder then add the flour mixture to the butter & sugar mixture. Blend all ingredients until combined.
Scrape down the bowl and mix again briefly. Scoop the dough onto a cookie sheet and bake for 10 minutes.
The cookies puff up while baking, so I use a cup bottom (coffee mug to be exact) to press them down after baking and then let them cool for 10 minutes on the baking sheet.
Transfer cookies to a cooling rack and let them cool completely before assembling them.
Creamy Peanut Butter Filling
1 stick softened margarine
1/2 cup creamy peanut butter
4 cups sifted powdered sugar
1 tsp vanilla extract
milk or heavy cream
With a mixer, beat margarine and peanut butter until creamy. Slowly add powdered sugar and vanilla. Beat until well combined. Slowly add milk until the filling smooths out and is nice and creamy.
Assembling the cookies
Spread or pipe frosting onto one cookie and top it with another cookie that is close in size. Roll the edge in chopped peanuts and enjoy with a tall glass of milk!
